INTERNATIONAL KIKISAKE-SHI


Vinotopia Asia is honoured to  offer the most internationally recognised Sake Professional Qualification – International Kikisake-Shi course established by the Sake Service Institute (SSI) which was founded in 1991 with the goal to educate and promote the understanding of Sake culture globally.

Our center is conveniently located on the Hong Kong Island and we aim to provide quality program with hand-picked Sake that are most appropriate to the course syllabus, Our experienced tutors will not only cover the course materials but will also be sharing industry insights and personal stories.

Successful Kikisake-shi will be granted a certificate and certification badge from SSI INT’L.

•⁠  Production process of sake
•⁠  Classification by flavor characteristics (4 main types of sake)
•⁠  History of  sake
•⁠  Understanding labels of sake
•⁠  Sake servicing & etiquette
•⁠  Formulation of sake promotion campaign
•⁠  Sake tasting

Assessment / Examination

Done in three parts with 3 Papers.
Part 1 : Knowledge of alcoholic beverages and sake (Multiple choice + short answer questions)
Paper 2 : Questions on sake service and promotion  (Multiple choice + short answer questions)
Paper 3 : Quality evaluation through tasting and knowledge on servicing (Blind tasting with Short Written Questions)

70% correct to pass

Duration

Total 18 hours course time tasting around 30 specially selected sakes
